I've noticed that, after a certain number of hours following my posting of an item, the options to edit or delete seem to disappear. Is this due to a setting on my account, an issue with the site, or intentional design? I'd think the owner of a post should always have the ability to alter their content!

Good question.
There are many answers. The best is that the forum designers feel that 60 minutes gives users adequate time to edit / delete. After that it's a matter of asking a mod to make changes.
One other item of note is once a thread has been responded to deleting or editing the original is not generally appropriate.
